Gluten-Free Bread (Breadmaker Recipe)
Ingredients:
- 1 tablespoon active dried yeast
- 3 ¼ cups warm water
- 2 tablespoons psyllium husk
- 2 cups tapioca starch
- 1 1/2 cups white rice flour
- 1/2 cup almond flour
- ½ cup millet flour
- ¼ cup sorghum flour
- 4 teaspoons salt
- 4 teaspoons apple cider vinegar
- My Zojirushi breadmaker (use setting #5 with medium crust)
Steps:
Prepare the Wet Ingredients
- Pour the warm water into the breadmaker pan.
- Add the apple cider vinegar.
Add the Dry Ingredients
- Sprinkle the psyllium husk over the water.
- Add the tapioca starch, white rice flour, millet flour, and sorghum flour on top.
- Sprinkle the salt around the edges to avoid direct contact with the yeast.
Add the Yeast
- Make a small well in the center of the dry ingredients and add the active dried yeast.
Set the Breadmaker
- Choose the gluten-free setting (or the basic bread setting if your machine doesn’t have a gluten-free option).
- Select a medium crust for the best texture.
- Start the cycle.
Baking and Cooling
- Once the cycle is complete, remove the bread pan from the machine.
- Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Tips for Best Results
- If your breadmaker has a mix-in signal, check to ensure all ingredients are well combined at that stage.
- Let the bread fully cool before slicing to improve texture.
- Store in an airtight container or freeze for longer freshness.
